Granola Carrot Cookies
While fall is peak season for carrots, you can easily pick them up at the grocery store year-round. These granola carrot cookies are perfect to make for your out-of-town guests. They’re both delicious and healthy! Perfect in the afternoon or to sneak one with your morning coffee. (The secret is safe with us!)
Go ahead, scan the list of ingredients. That’s right. No oil or corn syrup. This unique recipe (that we recommend you double because you’ll eat a few straight out of the oven) has molasses – a nourishing sweetener that contains essential vitamins and minerals in addition to being low in fat.
Ingredients:
1/3 cup molasses
½ cup brown sugar
1 tsp vanilla
1 tsp cinnamon
¼ tsp nutmeg
1 ½ cup low-fat granola
1 cup all-purpose flour (whole wheat flour can be substituted for ½ the amount)
2 egg whites or 1 egg
½ tsp baking soda
½ tsp baking powder
1 small carrot, peeled and shredded
½ cup raisins
Directions:
Combine molasses, sugar, vanilla, and egg in a bowl. Beat with a fork until blended. Add remaining ingredients, stirring to blend. Drop by teaspoons onto cookie sheet. Bake at 350 for 10 minutes. Makes 30 cookies.
