Recipe: Crab Cakes
These crab cakes can either be served with broccoli or rice pilaf. When it comes to this crab cake recipe, Old Bay seasoning is a wonderful enhancer.
Serves: 4
Preparation Time: 20 minutes
Ingredients:
1 egg, beaten
2 Tbs. low-fat mayonnaise
1 tsp. dry mustard
1/2 tsp. ground black pepper
1 tsp. Old Bay seasoning
1/4 c. crackers, crushed
1 lb. lump crab meat
2 tsp. Worcestershire sauce
1 Tbs. lemon juice
3 Tbs. chopped pimento or fresh, chopped red pepper
1/4 tsp. baking powder
Preparation:
Stir in all ingredients until well blended. Shape into patties carefully, to avoid packing. Pan saute in 2 tablespoons of olive oil or brush with vegetable oil and bake at 400 degrees for 15 minutes. Serve a simple red pepper tartar sauce on the side made with a blend of (bottled) roasted red peppers, low-fat mayonnaise, and pickle relish. Tip: Fresh lump crab meat works best for this recipe. Add-Ins: Add a teaspoon of Tabasco sauce and a few capers for a spicier taste.
