Recipe: Red Pepper Dip
This quick and easy red pepper dip recipe is a great option for a lighter touch to holiday fare. Not only is this versatile dip perfect for a crackers and vegetables, but it could also be used as a spread for bagels or sandwiches.

Ingredients:
1 (8-oz.) package reduced-fat or fat-free cream cheese
1 (7-oz.) jar roasted red peppers, drained
1 tsp. dried parsley or 1 Tbs. fresh parsley, chopped
1 tsp. minced garlic
1/2 tsp. dried basil
Preparation:
Blend all ingredients in a food processor until smooth or beat on low speed for 1 minute. Serve as a dip for crackers, bread sticks or vegetables. Prep time: 5 minutes. Serves 8 (Two tablespoons per servings, based on fat-free cream cheese).
