Recipe: Lemon Berry Ladyfingers Dessert

Ingredients:
1 package ladyfingers
1 (.3-oz.) package, sugar-free, lemon-flavored gelatin
3/4 c. boiling water
2 (8-oz.) packages, fat-free cream cheese
2 c. powdered sugar
2 T. lemon juice
2 c. fat-free or reduced-fat whipped topping
1/4 c. berry preserves
2 c. berries (raspberries, blackberries or strawberries, fresh or frozen)
Preparation:
Line a 9-inch pie, cake plate or springform pan with ladyfingers. Prepare gelatin by boiling water to lemon gelatin, stirring to dissolve. Chill for a few minutes while preparing the remaining mixture. In a 2-quart mixing bowl, beat cream cheese until softened. Gradually add powdered sugar, mixing until well blended. Add lemon juice; continue to mix for 30 seconds. Add slightly cooled gelatin to cream cheese mixture, stirring to blend. Fold in whipped topping.
Heat preserves in the microwave oven for about 45 seconds or until warm. Pour preserves over fruit, stirring to coat the berries with the mixture. Drizzle half of the berry mixture over the ladyfingers. Pour filling over fruit. Spoon the remaining berry mixture over filling. Use the tip of the spoon to swirl the berry mixture in a circular pattern. Refrigerate for at least 30 minutes. The longer this is allowed to be refrigerated, the firmer the texture will be. Serves 8.
