Ingredients:
1 ½ cups all-purpose flour, ½ the amount can be substituted with whole wheat flour
1 cup oats, or bran cereal
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 cup raisins, or chopped nuts
1 cup banana, mashed or shredded zucchini
1 (8oz) can crushed pineapple
2 T vegetable oil
2 eggs, 4 egg whites or ½ cup egg beaters
½ cup sugar
½ cup brown sugar
Directions:
Combine flour, oats, sugar, baking soda, baking powder, salt, cinnamon in a medium mixing bowl
In another bowl, combine eggs, oil, pineapple, and bananas until well blended. Stir in raisins. Add liquid mixture to flour mixture, stirring to blend evenly.
Spoon mixture in muffin cups, lined with paper or sprayed with vegetable oil
Bake at 350 degrees for 10-12 minutes
